Ingredients:
2 T FLOUR
3 T OLIVE OIL
1 (28 OZ) CAN DICED TOMATOES OR EQUIVALENT FRESH
2 BAY LEAVES
1/8 TSP GROUND CLOVES
2 (16OZ) CANS SPINACH OR EQUIVALENT FROZEN
1 LARGE ONION
1 STALK CELERY
1 GREEN PEPPER
BREAD CRUMBS
GRATED CHEESE
Instructions:
PUT 2 T OIL IN PAN. ADD TOMATOES, SALT, PEPPER, BAY LEAVES AND 1/8 TSP CLOVES OR TO SUIT TASTE. PARBOIL CHOPPED ONION, CELERY, AND PEPPER. ADD TO TOMATO MIXTURE AND THICKEN WITH 2 T FLOUR.
DRAIN SPINACH AND HEAT THROUGH WITH1 T OIL. GREASE BAKING DISH, PLACE IN LAYERS TOMATO MIXTURE AND THEN SPINACH. tOP WITH BREAD CRUMBS AND CHEESE. BAKE AT 350 FOR 30 MINUTES.
