Ingredients:
1 pound shrimp, peeled, divined, and finely chopped
1 egg, lightly beaten’
1 Tbsp dry sherry
1 tsp baking powder
1slice bacon, finely chopped and slightly cooked, drained
4 water chestnuts, finely chopped
3 tbsp finely chopped green onions
1Tbsp cornstarch
½ tsp salt
¼ tsp pepper
½ tsp sugar
¼ tsp ground ginger
oil for deep frying
Instructions:
Combine chopped shrimp, bacon, water chestnuts, and green onion. In a separate mixing bowl, combine egg, sherry, baking powder, cornstarch, salt, pepper, sugar and ginger. Stir in the chopped shrimp mixture, shape mixture into ¾-inch balls.
Heat oil to 360 degrees. Drop balls in hot oil carefully and a few at a time. Fry until golden brown. Drain on paper towel then transfer to a warmer. Serve with cocktail sauce.
Make about 36 shrimp appetizers.
